Easy Chicken Fried Rice

Make dinner

    Cook chicken in 1 tablespoon neutral oil in a large skillet until browned and 165°F, 6 to 8 minutes; transfer.

    Add remaining oil and scramble the eggs just until set.

    Add cold rice and vegetables. Cook over high heat, stirring, until hot and lightly crisp, about 5 minutes.

    Return chicken and add tamari, sesame oil, and scallions. Toss for 1 minute.
